Bok choy is a sturdy green leafy vegetable that is most widely available in the fall (though it can be found in spring and summer). It is a variety of cabbage, with substantial stalks at the base of the leaves (i.e. it does not form a head). Bok choy has good body and a mild flavor, and is excellent for steaming or braising. Find it at farmers’ markets and local groceries, looking for crisp, unblemished leaves. Store it dry in a plastic bag in the fridge, and it should stay fresh for about a week.
